How to Make Cilantro Pesto


Cilantro Pesto 



 The best way I know to use a lot of  Cilantro at once is pesto. And wow, if you are a cilantro fan and have never tasted cilantro pesto you are in for a treat. 

makes about 2 cups

5 oz. (about 4 cups packed) fresh cilantro
2/3 cup vegetable oil (olive, canola, etc.)
2/3 cup toasted nuts (pecans, pine nuts, walnuts, et al.), chopped
4 cloves garlic, coarsely chopped
2/3 cup grated parmesan cheese
salt and pepper to taste

Add Cilantro, oil, nuts and garlic into a blender or food processor, I use the Kitchen Ninja and it is the best. Blend until smooth , This will require turning off the blender a few times to smush things down.

Scoop into bowl add the cheese and blend with a wooden spoon or spatula, salt and pepper to taste.

This recipe is so delicious, put it on pasta, crackers, sandwich's, or just a spoonful is good.  Cilantro has been effectively used to help remove heavy metals and other toxic agents from the body.
